Great and easy dinner that uses hamburger in a new and tasty way!!!!
Crush the peppercorns or use course ground pepper (sometimes I use Montreal steak seasoning). Shape beef lightly into four patties and press pepper into both sides of patties. Sprinkle a light layer of salt over bottom of heavy skillet just large enough to hold hamburger patties. When salt begins to brown, add 4 teaspoons butter and heat until very hot. Add hamburgers and cook until well browned on one side. Turn and cook for 30 seconds over high heat, then lower heat to medium and cook 1-2 minutes for rare. Transfer to warm platter. Pour fat from skillet, ( I wipe the pan with paper towel to clean pan off burned on food). Add brandy and then lemon juice. Swirl in the optional butter slices and pour slightly thickened sauce over hamburgers.
I find it sometimes will take a little longer cooking to get the right temperature of the hamburgers...medium or well. Use your own judgement. I also use the sliced butter at the end, it adds so much flavor. You can light the brandy if you do not want all the alcohol with a long match, and shake skillet until flames go out. I never light the brandy. Use caution!!!!! It usually pair it with mashed potatoes and green beans. YUM
