I didn't have apple juice that the original recipe called for so I substituted orange juice, actually a mango peach OJ, and it was delicious.
Heat oil in a large skillet. Add chicken and garlic and cook until lightly browned. (Cook in small batches and remove to a bowl).
Mix together ginger, red pepper, 3/4 cup orange juice, brown sugar, ketchup, vinegar and soy sauce. Add to pan and heat until boiling.
Return chicken to the pan and bring to a hard boil. Reduce heat and simmer for 20 minutes.
Mix remaining 1/4 orange juice with cornstarch. Add to pan and bring back a boil, stirring until thickened.
Serve over rice or pasta.
