Kosher for Passover
1. Preheat oven to 350 degrees
2. Grease baking dish
3. In mixing bowl, beat eggs well
4. Stir in hashbrowns
5. Stir in matzoh meal
6. Add salt, pepper, tarragon, rosemary
7. Add onion
8. Add schmaltz and vegetable oil
9. Combine well
10. Pour into prepared dish
11. Sprinkle paprika on top for color
12. Bake at 325 for 1 hour
13. Let stand 10 minutes before serving
