Yams
Preheat oven to 400 degrees. Toss yams with all ingredients. Layout on parchment-lined baking sheet. Bake for 20 minutes or until tender. Reserve
Spinach
Steam spinach until wilted, approximately 1 minute, and chop coarsely. In a covered sauce pan on medium-low heat, slowly cook oil and leaks until the leeks are clear. Add spinach, salt, pepper and nutmeg. Reserve
Base
Mix all ingredients except flour and transfer to a baking dish. Cover tightly and bake at 400 degrees for 30 minutes. Allow to cool Put mixture and flour into a food processor.
Assembly
Reduce oven temperature to 350 degrees. For individual portions assemble on oven-proof plates and place in oven for 10 to 15 minutes until lightly brown. Careful not to burn the hazelnuts.
For casserole use a 9 X 14 glass dish. Place half of the yams on the bottom of the dish. Spread spinach mixture evenly over the yams than distribute the rest of the yams over the spinach. Next spread the blended base over the spinach and then the vegan creme Fraiche. Top with hazelnuts.
Garnish with fresh herbs such as thyme, tarragon, dill and oregano.
To make Creme Fraiche: Puree tofu, almond butter, Dijon and sea salt in a food processor and fold in chives.
