Healthy cottage cheese pancakes for one

I was looking for a healthy pancake recipe and found this recipe for cottage cheese pancakes. I tweaked it to be lower in calories and yummier. It's a great high-protein breakfast!


70 grams cottage cheese; (non fat/ low fat/ 4%)
30 grams oatmeal; (quick cooking)
1 medium egg
1 egg white
1 to 2 TBSP artificial sweetener
1/4 tsp cinnamon; (add more if you like)
1 tsp vanilla extract
1 TBSP water

Original recipe makes 1 Servings



Mix all ingredients except water. Use a blender if you want smooth pancakes. I didn't blend mine and it turned out with a nice 'bite' to it.

Slowly add enough water to get a more spreadable consistency.

Heat some cooking spray in a pan on medium heat. Cook till browned on both sides. It takes a little longer to cook than regular pancakes so don't have the heat too high.

Enjoy with whatever topping you like! Fruit, yogurt, syrup...


*If you leave your batter lumpy, you will have to spread it around in the pan to get a pancake shape. Otherwise it will be a mound.

Just made these & they were great:) Didn't have any quick cooking oats so I used a package of maple & brown sugar high fiber instant oatmeal & it worked fine just used a little less sweetener. Kept everything else the same. Ate one pancake by itself & one with some fresh sliced peaches, yum:-) Saving this recipe to my favorites! Thanks for posting Santhiak!
