This tasty stew is hardy fare for a cold evening. It's heart-health and Diabetic-friendly as well.

"I have been looking for an easy fish stew and i have to say this is the most easy and tasty soup ever! Did not blend. Chopped potatoes in half inch cubes. Boiled a lil longer. Used rotel onstead of salsa. Used red fish insteadcof tilipia. Cooked side of rice and cornbread. Simply delicious!"

Ingredients

2 cups Chicken broth
1 cup Beer; - or extra broth
4 cloves garlic; - crushed
1/2 cup Celery; - chopped
1/2 cup Carrots; - shredded
3 medium Plum Tomatoes; - diced
1 medium Potato; - shredded
1/4 cup Chile salsa; - as hot as you like
1/2 teaspoon kosher salt; - to taste
1/2 teaspoon Black pepper; - to taste
1/4 cup lime juice; - to taste
1 pound Tilapia filets; - cubed

Servings  

Preparation

Place broth, beer, garlic, celery, and carrots on a large pan. Simmer until veggies are mostly tender (about 10 minutes). Add potato, tomato, salsa, and cook unti potatoes are soft (another 10 minutes). Blend 3/4 of the soup until smooth, season with salt & pepper, add lime juice to taste. Return to pan and re-heat to low boil.

Add fish cubes and cook just until fish is cooked through (about 5 mins).

Serve with garlic toast or croutons.

For a more "rustic" version omit the step with the blender.

I threw this together so I didn't have potatoes. I will probably cook double next time because it was a little less than I thought. Rotel is great to use for the salsa. I also added shrimp. Spicy, but very tasty!

This was very tasty. I only blended 1/4 of the soup mixture. This might serve 8 as a side to a meal but 4 if used a main course.

Reads like a Tropical (Caribbean) fish soup recipe (which are always delightful). I think I'll try it with bass.

What other fish have you tried this with and liked it? I think I only have salmon in the house but would like to try. I will respond myself after my own experiment. Glad to hear many of you liked it w/o using the blender. Makes it that much easier.

I left it chunky and left out the hot sauce for my kids and just added it in after the fact for my own serving. My kids didn't like it but I did. I froze the leftovers with white rice in individual servings and can reheat anytime for a quick healthy meal.

Very nice soup. My only quibble is with the quantity. 'Serves 8'? Eight what? Elves? But very tasty.

Loved this soup. The beer does definitely give it a good flavor. This is now my fav soup!!!

This was really good. I made it with the blender and without and definitely preferred without. It was an easy recipe and surprisingly filling. I also added some shrimp, cayenne, hot sauce (I like it really spicy, and fresh parsley. Next time I might try it with a little rice too.
