This is a throw together dish. It will work with many different combinations of peppers, squash or even meat, enjoy!


Ingredients

Are you making this? 
1 cup Red, yellow, and/or green bell pepper; thin sliced, any combination of three
1 medium Yellow summer squash; 1/4" slice
1 medium Zucchini; 1/4" slice
1 small bunch Green onion; 1/4" slice
1/2 cup Button mushrooms; sliced
1 package Turkey smoked sausage; sliced, about 3/4" pieces
2 tablespoon Olive oil
2 ea Garlic cloves; sliced very thin
1/4 cup Parsley
2 tablespoon Lemon juice

Preparation

All ingredients are suggestions and amounts can be changed to suit your own taste. Put olive olive in hot non stick skillet. Add sausage pieces and lightly brown. Add vegetables, garlic, and mushrooms. Salt and pepper to taste and saute until heated through. Reduce heat and cover. Cook until vegetables are just tender. Add abut 1/4 cup parsley and 2 tablespoons lemon juice. Toss mixture and serve over riceor pasta. Add soy sauce at table if desired.
