Heat a fry pan on medium heat with the oil
Beat the eggs in a bowl
pour eggs and all of the of the veggies in the fry pan
Stir until eggs are cooked solid
turn heat off or to a very low temp
cover pan with a lid until mushrooms and peppers are soft to your preference
Serve with turkey bacon and/or hash browns (made from pure potatoes and veggies with no more than 1 tsp olive oil)
