Healthy Spicy Turkey Meatloaf

A spicy satisfying meatloaf that's healthy, too!

Ingredients

1 lb. lean ground turkey
1 Medium yellow Onion; chopped
1 medium green bell pepper; chopped
4 cloves fresh garlic; minced
1/3 cup zuccini; chopped
1/2 cup rolled oats
1/2 cup hot salsa
1 tblsp chili powder
1 egg
1 tsp. soy sauce
Dash salt; to taste
2 Tblsp olive oil
Dash Pepper; To taste

Original recipe makes 6 Servings

Preparation

Preheat oven to 350 degrees.

Sauté onions and bell pepper in a small amount of olive oil until slightly soft, let cool.

Combine all ingredients in a large mixing bowl and mix well.

Place all ingredients in a greased loaf pan and bake for 30 minutes or until center of loaf has reached 160 degrees.

Top with more salsa (if desired) before serving.
