This is a delicious eggrole with lots of asian flavors
IN A FOOD PROCESSOR:
- put carrots and celery only and pulse until its finely minced then transfer to a bowl
- put garlic and jalepenos only and pulse, transfer to seperate bowl from carrots and celery
- heat oil in a big pan on med-high heat
- saute chicken until fully cooked without letting it brown, then transfer chicken to a seperate dish with a lid and keep warm
- in the same oil, might need a little bit more, add carrots and celery and cook for 10 mins
- add bean sprout to pan, cook 10 mins
- add the rest of the ingriedents including chicken, except for corn starch, mix cover with lid and cook for 10 mins
- mix the cornstarch with water and pour it evenly over the mix in the pan, mix well and let it cook for about 2 mins or until the mix thickens
- let it cool before wrapping in the eggrole wrappers, then fry in oil and enjoy.
when wrapping the eggrole seal the edges with water so it can stick together and it wont open when frying
