A cold-weather staple at our house, this soup is delicious served with a grating of cheese over the top and a nice crusty bread.


Are you making this? 
1 lb Italian sausage
6 cups beef broth
1 28-oz can diced tomatoes
1 15-oz can tomato sauce
2 cups zucchini; sliced into 1/2" slices
1 large Onion; sliced
1 cup carrots; sliced into 1/2" slices
1 cup mushrooms; sliced into 1/2" slices
1 medium green pepper; chopped
1/4 cup Fresh parsley; chopped
2 tsp. Sugar
1 tsp. dried oregano
1 tsp. dried basil
1 clove garlic; minced
2 cups frozen cheese tortellini; OR 2 cups farfalle pasta

Original recipe makes 8



Brown sausage in large soup pot. Drain fat from pot.

Add all ingredients except pasta and simmer covered for 45-60 minutes, or until all vegetables are tender.

Add tortellini or farfalle and cook until al dente. Serve immediately.
