Flexible, easy to handle dough. Very tasty, particularly if you let them sit for one day before eating.
Preheat oven to 350 degrees
1. Using a mixer, beat together eggs and sugar, then add oil.
2. Mix together flour, baking powder.
3. Toss nuts and raisins in a little cinnamon sugar.
4. Alternately add flour and nuts and raisins to wet ingredients.
5. May need to add a litle bit of liquid, but it is a thick dough.
6. Let stand for at least 10 minutes.
7. On nonstick surface, shape into loaves (2 long or 4 med length), sprinkle with cinnamon sugar.
8. Place on baking sheet and score with serrated knife.
9. Bake for about 25-30 minutes.
10 Remove from oven and let rest about 15 minutes. Raise oven to 400 degrees.
11. Move to cutting board and cut slices through with serrated knife.
12.Bake for 8-12 minutes til golden brown.
13. Cook completely on rack. Store in airtight tin for 1 day before eating.
Can add 1/4 c oj for rugelach or cookie dough. Cut for cookies. Add jam and raisins and nuts for rugelach and roll like a jelly roll. Can also use for a pie dough.
For mandel, you can also add some mini chocolate chips.
If you bake on 2 shelves at the same time, double sheets so the bottoms don't burn on the second baking.
