Preheat oven to 500 degrees F.
Place potato wedges on a cookie sheet. Drizzle with just enough oil to coat. Season with Italian dried seasoning, salt and pepper. Roast potatoes and turn after 15 to 20 minutes. Sprinkle cheese liberally on potatoes and roast another 10 minutes, serve.

chewychavez 3 weeks agoWarning!!! This is a great recipe except for one issue, the oil. Yes olive oil sounds nice and healthy, and it is, until you cook it at the wrong heat. If you cook extra virgin olive oil over 350 it's past it's smoke point, meaning the healthy parts of the oil burns away and turn harmful. This recipe should call for peanut oil, it might change the flavor a little but your heart will thank you. Never use olive oil in high heat baking or grilling. Google olive oil past smoke point. Even cooking shows make this same mistake.

reno127 1 year agoVery easy and tasted great. But what I did was mix all of the fries in a bowl with the oil and seasoning. Turned out great.
GrEEnEyedGoldiE 1 year agoFollowing the reviews recommendation I started at 500 degrees for 15 min and turned down to 375 to finish... Very crisp, very good, not burnt... Know your oven!

amanda746 1 year agoYummy but I cooked them at 500 degrees for the first 15 mins and then turned it down to 375 for the remainder of the time.
