Simple herbed tomato water. I cheat a bit, to give it thickness and flavor, but i frankly love this approach. This works really well as a final addition to fish or even to a simple HD.
Add all ingredients to a medium pot, on a low heat. (note: only add half of the 1/2 cup of veg stock at the beginning of the cooking process)
Add lid and let simmer for a half hour.
Remove lid after half hour, test, season, and mash the tomato mixture.
Recover the pot, and let simmer for another half hour.
Remove from heat, and pass through a fine strainer.
