Preheat oven to 350 degrees F
Coat frying pan with nonstick cooking spray. Add onions and cook over high heat until they begin to brown.
Pour half of the tomatoes into a medium baking pan. Lay chicken in the pan and top with onions.
Pour rest of the tomatoes over top. Bake 30 minutes or until chicken is cooked through.
