None of your tinned stuff. These are real.
Don't be put off by the total time. The actual prep only takes about half an hour.
You need to start this the night before. Soak the beans in plenty of water overnight or at least 8 hours. Rinse well, put in clean water and bring to the boil. Reduce heat and simmer for between 45 minutes to an hour. Skim of the scum as it rises to the surface. You will only need to do this for the first 5 minutes or so, after which it will generally vanish. Drain well.
Heat the oil in a heavy pan. I prefer LeCruset. Fry the onions and bacon until they start to colour nicely. You don't really want the bacon to crisp too much as this will detract from the final texture you wish to achieve. You may also at this stage wish to put the chorizo or paprika. (take the chorizo out when the fat has rendered. You only want the flavour, plus it tastes fantastic if you eat it fried.)
Add the Sugar, Garlic, Vinegar, Tomatoes and Beans and stir well. Add 400ml water and stir in well. Bring to the boil, reduce and simmer for between 90 minutes and 2 hours. You need to stir every now and then to avoid the beans sticking to the bottom of the pan. You may also wish to cover the pan to avoid too much evaporation.
