Homemade Biscuits
Preheat overn to 450 degrees. Combine dry ingredients in a bowl. Cut the butter into the flour mixture until it resembles coarse meal. Adjust enough milk to mix just until combined, if it appears on the dry side, add a bit more milk. You should have a very wet and sticky dough. Turn dough onto a floured board. Do not roll with rolling pin. Instead gently pat the dough until about 1/2" think. Fold dough over 5 times gently press dough down to 1" think. Use a round cutter to cut into biscuits. Once you have cut as much as you can from the dough. knead the scraps and make as many more as you can. Place biscuits on cookie sheet making sure they are all touching. They must be touching to rise. Brush tops with melted butter. Bake 10-12 minutes until light golden brown.
Keep flour in freezer, use very cold ingredients. (butter, milk, and flour) Work quickly and do not over work dough, that will make very dry biscuits.
