The secret to tender biscuits lies in cutting as many as possible from the first rolling of dough. Those cut from a second rolling may be slightly tougher.
1.Preheat oven to 450 degrees. In a large bowl, stir together flour, baking powder, sugar, salt, and cream of tarter. Using a pastery blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center of the flour mixture. Add buttermilk or milk all at ounce. Using a fork, stir just until moistened.
2. Turn out dough onto a lightly floured surface. Knead dough by folding and gently pressing dough for 4 to 6 strokes or just until dough holds together. Pat or lightly roll dough to 3/4 inch thickness. Cut dough with a floured 2 1/2 inch biscuit cutter.
3. Place biscuits 1 inch apart on an un greased baking sheet. Bake for 10 to 12 minutes or until golden. Remove the biscuits from baking sheet and serve ammediatly. Enjoy!
