This is a great recipe for those who really love fresh and healthy ingredients in their cuisine.
Pre-heat oven at 392F. Mix salt and sugar in a bowl. Cut the tomatoes in half and remove seeds. Put them in a baking sheet peel side down. Sprinkle salt/sugar mixture on the tomatoes. Put the them in the oven for 1h30min (some water will form on the baking sheet). Gently remove the tomatoes from the baking sheet. Wash and dry the baking sheet and return the tomatoes to it, but this time peel side up for another 1 hour (356F). Gently remove the tomatoes from the baking sheet again and wash and dry the baking sheet. If they aren't dry enough for your taste return them to the oven for another 30 minutes. Let them cool in the oven.
Heat a small pan and add the olive oil once it's hot. Add the garlic and remove the pan from the heat (the idea is just to take out the sting from the garlic). Add the oregano. Put a layer of the tomatoes folded in half in a storage container. Add the oil mixtures and olives/capers. Keep adding layers until container is full and/or tomatoes are finished. You can add more garlic, capers/olives and salt if you prefer.
