Honey Balsamic Vinaigrette

2 ts Dijon mustard
1 Garlic; minced
1 tb olive oil
1 ts Dry Italian seasoning
1/3 c Balsamic vinega; r OR red wine
1/4 c Honey
1/4 ts Salt and pepper
1/2 c Canned apricots; drained

Original recipe makes 4



In blender or food processor, combine apricots, vinegar, honey, mustard, garlic and seasonings; blend until smooth. With motor running, slowly drizzle in olive oil until combined. Makes 1 cup. Prep: 10 minutes Nutrients Per l/4 Cup Serving: 134 calories, 3.5 g fat (23% calories from fat), 0 mg cholesterol, 0.35 g protein, 26 g carbohydrates, 0.5 g dietary fiber, 171 mg sodium.
