Spread onion quarters in baking disk with stock and place chicken on top
mix lemon, honey and oil and drizzle over chicken
Place half the lemon in chicken cavity and other half in dish
Sprinkle lavender and thyme over chicken
bake for 1 1/2 hours
Remove chicken once juices run clear
Rest for 5 minutes before carving
