I first had these at a B&B in Vermont many years ago, they are still a firm family favourite.
Mix all the dry ingredients thoroughly in a large bowl
Mix other ingredients except egg white and stir into dry ingredients, mixing thoroughly
Fold in whisked egg whites
Cook in a lightly buttered non-stick frying pan, turning half way through when first side is cooked
Makes about 16 x 3" pancakes. Great with maple syrup
