This recipe was given to my by Pat Weldon. Goes well with beef, pork and even fish!
Prepare a 2-cup bowl or decorative mold.
1. In a shallow saucepan, sprinkle the gelatin over the water to soften for 5 minutes, then heat very gently and stir to dissolve. Remove from heat.
2. Stir in all the remaining ingredients, except the mayonnaise! Chill the saucepan mixture for about 30 minutes until it is the consistency of thick egg whites.
3. Remove the saucepan from the fridge, and thoroughly mix in 1/2 cup of the Mayo. Hellman's is a mild mayonnaise; most others will be too strongly flavoured.
4. Pour the mixture into a mold or smooth bowl, and chill until set (about 2 hours).
To serve, set the mold or bowl in a pan of hot water for about 15 seconds, then turn it out onto a small plate. You may have to repeat if the mouse does not immediately release.
