In a pan, sear both sides of chicken breasts. Coat both sides of chicken with horseradish mustard, salt and pepper to taste, and put in greased baking pan.
Bake uncovered at 350 degrees for 35 minutes.

While the chicken is baking, cook bacon about 1/2 way. Set aside and wrap in paper towel to remove extra grease.

Top chicken with bacon strips and broil in oven until fully crispy, ~5 minutes
Top bacon with pepper jack cheese and broil for ~1 minute or until melted
