Great way to use your extra zucchini
Mix zucchini, salt and onion in glass bowl. Refridgerate overnight.
Drain the mixture and rinse well. Squeeze out any extra water.
Place remaining ingrediants in large pot and stir well. Add in the drained zucchini/onion mixture. Bring to a slow bowl and simmer for 30 minutes.
Add to prepared canning jars and cover with water. Process for 30 minutes.
If you like hotter food, add more jalepenonos.
