Combine all ingredients except toppings and place in a greased 9x13 casserole dish.
Sprinkle on toppings in layers if desired. Add cheese 10 to 15 minutes into baking time.
Bake 20-25 minutes at 400 degrees.
You may make this ahead and place it in the refrigerator overnight or mix and cook right away. I mix all the liquid ingredients and onion, then mix with the chicken, eggs, and celery.
