Fresh italian sausage made at home.
Mix all ingredients except the wine. Cut the pork into 1 inch cubes and mix the dry ingredients with it.
Next run the meat and dry ingredient mix through the coarse plate on the grinder.
Add the cup of wine to the first grind and mix well. (no wine should be in the bowl.)
Run the mix through the medium plates.
Stuff in casings or seperate into 1lb bags.
