Suggest a better description1. Preheat oven to 425 degrees. Coat a baking sheet with cooking spray.
2. In a small bowl, combine the tomato, corn, beans, jalapeno pepper and oil. Place the tortilla on the baking sheet. Sprinkle with the cheese and top with the tomato mixture. Place the egg in the center. Sprinkle with the black pepper.
3. Bake for 8 minutes, or until the egg white is set and the yolk is still runny. Sprinkle with the cilantro.
