Mexican Scrambled Eggs.


3 tablespoons Onion; minced
1 clove Garlic; minced
2 Green peppers; finely chopped
3 tablespoons Butter
1/2 cup Tomato puree
1/4 cup Water
Salt; to taste
Pepper; to taste
6 Eggs; slightly beaten

Original recipe makes 4



Fry onion, garlic and green pepper in butter. Then add tomato puree, water and salt and pepper to taste. Cook for 3 minutes; hen add slightly beaten eggs, and scramble.

Thank you for posting this recipe. This recipe does not have the kick it needs to match the dish in the South, however, you can replace the green bell peppers with jalapenos and it will give the kick it needs. Revueltos is a dish of scrambled eggs mixxed with other ingredients. Popular ones are with white mushrooms and shrimp, shrimp and tomato, ham and onions, wild mushrooms and blood sausuage, spinach, smoked salmon, peppers and onions, sheep brains, chorizo sausage. I have even had something like this mixed with cactus. So take the base of this recipe and add different things to it. Add this dish to a tortilla and add cilantro... makes a mean breakfast taco!
