A smooth dip or sandwich spread.


2 cans Garbanzo Beans; drain and reserve liquid
2/3 cup Tahini; well stirred
1/2 cup olive oil
1/4 cup Lemon juice
3 cloves Garlic
1 teaspoon Salt

Original recipe makes 6



Combine all ingredients in a food processor and processes until smooth. Reserved liquid from the beans may added, a tablespoon at a time to desired consistency. Serve with pita bread and/or vegetable sticks.

Excellent starting point! I've always wanted to make hummus, and since using this recipe, I've gotten it where we like it most. I've doubled the garlic and lemon juice, added smoked paprika and roasted ground cumin. Also, since I can never find tahini that isn't bitter, I've subbed natural peanut butter and toasted sesame oil. Works really well!

I did this without the salt, and the result was very popular here. There is probably plenty of salt in the canned chickpeas, and I am concerned about my blood pressure, since I have had hypertension all my adult life. I gave this recipe 4 stars instead of 5 because it called for too much salt.

Very good and very easy. A bit too salty for my taste, next time I will start off with half the amount of salt.
