1) Preheat oven to 300F.
2) Line a baking Sheet with parchment paper.
3) Beat 2 egg whites, at room temperature , with 1/4 tsp salt in a medium bowl using an electric mixer on medium- high until frothy , about 1 min.
4) Beat in 1/4 cup granulated sugar until stiff peaks form, 2 to 4 min. Fold in 1/2 tsp vanilla extract and 4 cups flaked sweetened coconut.
5) Drop 2 tbsp coconut mixture in 1 in. apart on prepared sheet.
6) Bake in center of oven until edges of macaroons are golden, 18 to 20 min.
7) Transfer sheet to a rack to cool completely.
8) Store in an airtight container for up to a week.
