1 cup Mint leaves; tightly packed
2 tablespoons Jalapeno; finely chopped
2 tablespoons Onion; finely chopped
1/2 teaspoon Fresh ginger; finely chopped
4 teaspoons Lemon juice
3 tablespoons Almond butter
Salt; to taste

Original recipe makes 8



Combine all the ingredients in a food processor and puree until the mixture is smooth, for about ten to twenty seconds.

Yield: 1 cup (250ml)

You can also add cilantro to this. We make it in fair sized patches and freeze the pesto in 2 oz (ice cube sized) servings. It keeps up to 6 months in the freezer.
