A hearty fried rice recipe with chicken that is a one-dish meal with an Indonesian flavour
Heat the olive oil in a skillet or frying pan, add the chicken chunks, turning until lightly browned all over, then season with salt and pepper. Add the diced onions, garlic and ginger, continue cooking for a few minutes. Add the zucchini, grated carrot, pineapple, coconut, spices and rice, turning until well mixed. Add the coconut milk and bring to the boil while stirring, cook until slightly thickened.
