Insalata Caprese is perhaps my most favorite salad. I wanted to serve this for our block's Annual Holiday Open House, so I converted it to a finger food. It was a big hit! Bonus: once arranged it had a very holiday appearance.

Ingredients

Are you making this? 
1 lb grape tomatoes
1 lb fresh mozzarella; cut into 1/2" cubes
2 oz fresh basil leaves
2 tbsp extra virgin olive oil
Kosher salt and fresh ground black pepper to tast
60 Wooden Sandwich picks

Original recipe makes 60

Servings  

Preparation

Partially wrap a basil leaf aroun the grape tomato (you may have to cut some of the larger leaves to fit), skewer the wrapped tomato with the sandwich pick. Place a cube of mozzarella on the end. Continue until all the tomatoes and cheese is skewered. Arrange on a platter, drizzle with the olive oil, then sprinkle with salt and pepper.

Great recipe. So easy to prepare & great tasting! I added some marinated peppers to some too for variety.

I've done this same thing before and it was a big hit! Make a vinaigrette or buy some as a dipping sauce if you'd like!
