Italian Macaroni Salad

Simple macaroni salad with fresh tomatoes and olive oil.


2 cups elbow macaroni
3/4 cup heirloom tomatoes; diced, about 2 large tomatoes
1/4 cup basil; cut chiffonade style
1/4 cup feta cheese; crumbled
1 small handful olives; any type, halved
2-3 tablespoon olive oil
salt and pepper; to taste

Original recipe makes 5 Servings



Cook pasta according to package directions. Let them cool completely.

Combine all but the last three ingredients in a large bowl.

Pour olive oil over the salad and stir to combine. Season with freshly ground pepper and salt to taste.

For a heartier main dish, add artichoke hearts, tofu, or chickpeas.
