Suggest a better descriptionOver medium heat, saute onion until translucent in a large stock pot, then add garlic in and saute for 1-2 minutes longer. In same pot, break up the sausage into bite size pieces and add to onion & garlic. Stir until cooked through.
Add all ingredients, except for zucchini and tortellini and bring to a slow boil.
As soon as it begins to boil, turn heat down to simmer and add in the zucchini and tortellini.
Let cook 15 more minutes or until the zucchini is cooked through.
Tortellini can also be cooked in a separate pot and added to each soup bowl, so if there are leftovers, none become soggy.
Let cool t room temperature.if you want to freeze leftover soup.
Use freezer zip lock bags to store soup.
