Traditional and easy to make. Make meatballs ahead if you like to make it even faster on the day. This filled 4 - 500 ml Mason Jars w/4-5 meatballs per jar. So this works out to 10 WW Points Plus/Jar. Freeze and take for lunches!
MEATBALLS:
Combine:
Meat
1/2 onion finely chopped
1/2 tsp. garlic - or the 1 clove
2 tbsp Parmigiano Reggiano Cheese
Salt/Pepper to taste
Will make about 15-18 Tablespoon size meatballs
Place in a skillet with a splash of EVOO and remove as soon as both sides have been browned
Set aside for later.
SOUP:
In a Stock pot, add the oil, heat on low.
Add the remainder of the onions and garlic and fry until soft (do not brown)
Pour in the stock, turn heat up to medium and simmer for 5 minutes
Add the pasta and pop in one meatball at a time to avoid sticking together.
Simmer for another 6-10 minutes, stirring occasionally.
Stir in the spinach and simmer for 2-3 minutes more.
Taste - adjust seasoning with Salt/Pepper as appropriate.
Serve with Parmigiano Reggiano Cheese for garnish.
