Vodka Pasta Sauce
• Heat large skillet over moderate heat
• Add oil, butter, garlic, and shallots
• Sauté shallots 3-5 minutes
• Add vodka to pan, 3 turns around pan in steady stream equals 1 cup
• Reduce vodka by half- 2 to 3 minutes
• Add chicken stock, tomatoes
• Bring sauce to bubble, reduce heat to simmer
• Season with salt and pepper
• Stir cream into sauce
• When sauce returns to bubble, remove from heat
• Toss pasta with sauce and basil
