Any flavour of jam can be used with this biscuit recipe.
1. Beat softened butter and sugar to a cream. Add the egg and beat well. Add vanilla. Gradually add sifted flour.
2. Mix into a stiff paste. Take small pieces (about 1 tsp) of mixture and roll in to balls. Place on greased trays, about 5 cms a part, leaving room for spreading.
3. Make a slight hollow in each with the floured end of a wooden spoon. Place a little jam in each biscuit.
4. Bake in a preheated moderate oven for 15 minutes.
Makes 36.
