A wilted salad of cabbage, carrots, cucumbers, and celery.
Cut cabbage into strips.
Cut carrot, celery, and cucumber into thin strips.
Place all vegetables in large mixing bowl or Tupperware container. Pour boiling water over them and cover with lid or plastic wrap. Let sit 20 minutes or until cabbage is somewhat softened. Drain.
Mix together sugar and vinegar. Add just a splash of olive oil.
Mix solution into cabbage and other vegetables. Serve warm.
