This is a most delicious Jamaican Jerk Seasoning that you can use as a rub, in a marinade, or whatever you like.

Note: this recipe does not contain any salt because it can be used in a marinade with soy sauce for example. Add salt as needed when using for a rub or a marinade that doesn't already have a salty ingredient in it.

[Note: The weight of the combined, non-adjusted, dry ingredients below--not including salt--is 60 grams. (This is just a note for the author to scale dry ingredients by weight.)]


1 tablespoon whole allspice
1 tablespoon dried thyme
1 1/2 teaspoons cayenne powder
1 1/2 teaspoons black peppercorns
1 1/2 teaspoons sage leaf
3/4 teaspoon cinnamon; grated
3/4 teaspoon nutmeg; grated
2 tablespoons garlic powder
1 tablespoon paprika
1 tablespoon sugar

Original recipe makes 4 Servings



Grind all the spices together and store in a jar. Add salt to taste for whatever you are using it in.

For a nice Jamaican Jerk Marinade use this seasoning with the following ingredients:

1/4 cup olive oil

1/4 cup soy sauce

3/4 cup white vinegar

1/2 cup orange juice (or lemon juice)

1/4 cup lime juice

1 habanero chile pepper, minced (optional)

3 green onions, minced (scallions)

1/2 white/yellow onion, minced

All my friends love this seasoning; I make up jars for them as gifts. It's quite delicious and even great for a rub on a roasted chicken (along with some kosher salt rubbed on).
