FOR THE SAUSAGES: SLICE SAUSAGES AND BROWN IN A LARGE PAN.
IN A LARGE NONSTICK SKILLET:COOK THE ONIONS IN OLIVE OIL FOR 4 OR 5 MINS.ADD CELERY AND COOK UNTIL SOFT>ADD THE CORN,JALAPENO,PAPRIKA,OREGANO AND BROTH. WARM THROUGH.
ADD THE RICE AND SAUTE UNTIL WARM (ADD A LITTLE BIT OF BROTH IF THE MIXTURE SEEMS TOO DRY. ADD THE SAUSAGES AND CHICKEN AND COVER TO STEAM AND WARM THROUGH. SEASON TO TASTE WITH SALT
