Great dish for your turkey left-overs!
(Jana's quick version)
Melt butter in large skillet or soup pot.
Add onions & celery. Cook until clear.
Arrange turkey in a layer over this then add broken vermicelli.
In a medium bowl, mix salt, pepper, cream of chicken soup & chicken broth.
Pour over the vermicelli, careful to moisten all.
Place mushrooms on top and sprinkle with cheese. Dash with paprika.
Cover tightly and cook on high until steam escapes.
Turn down and simmer 30 minutes.
