Cook 1 cup of brown rice per person.
Prepare next group of ingredients.
Prepare dressing (1 recipe per 4 people)
Serve as a salad bar in this order:
Rice
Dressing
Chicken
Other toppings
Mango Chutney (Emeril Lagasse)
1 Tablespoon butter
1/2 cup chopped onions
pinch of salt
2 cups small diced mango
1/2 cup white vinegar
1/4 cup sugar
1 Tablespoon cornstarch
2 Tablespoons water
Directions
In a saucepan over medium heat, melt the butter.
Add the onions. Season with salt.
Saute for two minutes. Add the mango. Continue to saute for 2 minutes.
Add the vinegar and the sugar. Bring the mixture to a boil.
Whisk the cornstarch with the water. Whisk until smooth.
Stir the slurry into the mango mixture.
Bring the mixture back to a boil.
Continue to cook for 4 minutes, stirring constantly.
Remove from the heat and cool completely.
Serving Ideas: Great for a potluck. You provide the rice and chicken. Other bring the rest of the ingredients.
