2. Place potatoes into a stockpot and cover with water,
3. Bring water to a boil, then reduce heat to low. Let potatoes simmer for 15-20 minutes or until they can be easily pierced with a fork. (Prepare fish while potatoes are cooking.)
4. Preheat oven to 400.
5. Combine all seasonings in a pinch bowl and mix well.
6. Make 1/4 inch deep slices into the salmon filets (about 3 slices on each)
7. Pour lemon juice over salmon.
8. Sprinkle 1 tablespoon of seasoning mix over salmon, coating evenly.
9. Bake salmon for 12 minutes at 400. Then, switch oven to broil and bake for 3 more minutes.
10. While salmon is baking, place cooked sweet potatoes into a large mixing bowl. Add butter and coconut milk. Mash until smooth.
11. Add remaining seasoning mix into mashed potatoes and mix well.
