Ready in 45 minutes

This could be the most sensational baste ever. The smoky bacon lends great depth of flavor. Once all the ingredients are lined up, the rest is easy.

Ingredients

4 c Beef broth
2 ea Bay leaf
1 t Dried Oregano
2 tb Unsalted butter
1/4 c Onion; chopped
1/4 c Celery; chopped
1/4 cups Green pepper; chopped
1/4 c Garlic; minced
2 tb Jim Goode's BBQ Beef Rub; (See Recipe BigOven 160013)
1/2 t Dry mustard
1/2 t Salt
1/2 t White pepper
1/2 t Black pepper
1/4 t Cayenne
2 Lemon; finely grated zest of two lemons
2 Lemon; Juice of two lemons
2 tb Soy sauce
2 tb White wine vinegar
1 tb olive oil
1 tb Sesame oil
1 lb Bacon; finely chopped

Preparation

1. Bring broth, bay leaves and oregano to a boil. Reduce heat to a simmer.

2. Meanwhile, melt the butter in a nonstick skillet over medium-high heat. Add the onions, celery, green pepper, garlic, Beef Rub, mustard, salt, white and black pepper, and cayenne. Cook until browned, about 5 to 7 minutes, then add to broth along with the lemon zest, juice, soy sauce, vinegar and the oils. Stir to combine.

3. Cook the bacon in a nonstick skillet until soft. Add the bacon and any rendered fat to the broth mixture. Continue simmering until the broth is reduced by a fourth, about 45 minutes to an hour. Adjust the seasonings and baste.

I have used this recipe several times and always get rave reviews. Like above, once you get the ingredients ready it is easy. Takes sometime but well worth it!
