This is a delicious low-carb recipe.
Sprinkle chicken with salt and pepper. heat large skillet over medium-high heat, melt butter with oil. Brown chicken on both sides. Reduce heat and cook covered 15 minutes. Transfer to platter and tent with foil to keep warm.
Add cream to skillet, scraping up bits. Stir in mustard and tarragon. Cook over medium heat stirring constantly, 5 minutes until sauce thickens.
Pour sauce over chicken.
