Place champagne in saucepan. Bring to boil, cook until liquid is reduced to about 1/4 cup, about 8 minutes. Cool completely.
In large bowl, combine cracker crumbs, 1/2 cup sugar and butter. Press into bottom and 1-1/2 in up side of greased 9in. spring-form pan; set aside. Arrange sliced strawberries over bottom.
In large bowl, beat cream cheese and remaining sugar until smooth. Beat in condensed milk, cornstarch, and champagne. Add eggs and egg yolks and beat at low speed until combined. Pour mixture over strawberri8es. Place on baking sheet.
Bake at 325 for 55-60 minutes until center almost set. Cool on wire rack for 30 minutes. Run knife around edge to loosen; cool 1 hour longer. Refrigerate overnight.
Remove sides of pan. For topping, wash strawberries and pat dry. Slice and arrange over cake. In microwave, melt milk chips and 1/2 tsp shortening; stir until smooth. Drizzle over strawberries. Repeat with white chips & remaining shortening. Drizzle over strawberries.
In small bowl, beat cream until it begins to thicken. Add confectioners sugar; beat until soft peaks form. Serve with cheesecake.
Add eggs and yolks one at a time. TO slice, dip knife into warm water before slicing. Clean knife after each cut.
