Ready in 40 minutes

Tastes like the soup at the Olive Garden - yummy!

1/2 cup Onion; chopped
2 3/4 cups Chicken broth
2 medium Potatoes; cubed, leave skin on
2 cups Kale; coarsely chopped
8 ounces Italian sausage; (I used turkey Italian sausage)
1/4 teaspoon Salt
1/4 teaspoon Cayenne pepper
1/4 cup milk

Original recipe makes 4 Servings

Crumble and brown the Italian sausage in a skillet (if it is in casings, remove from casings); drain off grease.

Combine sausage with all remaining ingredients except milk in a soup pot and bring to a boil. Reduce heat to medium-low and simmer at least 30 minutes until the potatoes are tender. Add milk the last five minutes, just long enough to heat through.

Notes: Original recipe called for heavy cream instead of milk. This is pretty spicy, so adjust the cayenne down if you prefer. Kale is a curly, leafy green vegetable sold near the cabbage and broccoli. Be sure to wash thoroughly and remove stems. If you can't find kale, you could probably use collard or mustard greens. Keeps well in refrigerator. Recipe from my sister-in-law, Jodi Young.

So healthy and very delicious! I used whipping cream instead of milk though. Also sautéed the onions first and added a clove of garlic. Great recipe!

This is a very hearty, filling soup - spicy! You can buy the big bags of chopped kale at the grocery and divide them into recipe-size batches, then freeze for a future time.
