Joe's Cincinnati Chili Variation

4 cups water

1/2 large onion

1/2 to 1 red bell pepper (other colors ok)

1 packet of Cincinnati chili mix

1.25 to 1.5 lb. ground turkey (not all breast meat)

1 can tomato paste

1-2 tsp cinnamon

2 tsp oregano

1-2T balsamic vinegar

(optional) 1 tsp hot chili flakes

1 can drained kidney beans

Bring everything but the beans to a slow boil. Cook until thickened, about 1 to 1.5 hours. Add the beans 1/2 hour before done (e.g. when starting the pasta water.
